Product information

Malvasia Nera and Ciliegiolo come together in this wine in a perfect balance of aromatic freshness and ageing potential. It stands apart from traditional Sangiovese-based wines, with an intense, deep colour and distinctive notes of red fruit and spice typical of these two grape varieties.

The grapes are harvested by hand at the ideal time for these two relatively early-ripening varieties. They are swiftly brought to the winery, where they are carefully selected and destemmed. The whole berries are transferred to temperature-controlled stainless-steel tanks. Fermentation does not exceed 23°C; during this stage, pump-overs and délestage allow for a gradual, gentle extraction of colour and tannins that are never aggressive. Fermentation is kept brief to avoid over-extracting harsh tannins and to preserve the varietal aromas as fully as possible. The duration of fermentation and the subsequent maceration are determined case by case through tastings from the tank, with the aim of obtaining a wine that is as soft and approachable as possible, since it does not undergo any subsequent oak ageing.

At the end of fermentation, the grape skins are gently pressed, and only the first press fraction is blended with the free-run wine.

After malolactic fermentation, the wine is aged in stainless-steel tanks in contact with its fine lees. It remains there until the following spring, completing its maturation while the tannins soften and the wine becomes fuller and rounder on the palate.

Host information

A vineyard. A winery. A family.

L'Oliviera originates from the land of Chianti Classico and a family that has worked it for generations. In Vagliagli, where the dry soil and climate define the character of Sangiovese, every decision starts from the vineyard — because that's where quality is built, even before entering the winery.

Our work follows the rhythm of the land, not the market. We produce Chianti Classico, Riserva, and Gran Selezione, and an extra virgin olive oil handpicked when the olive is still green. Only attention, continuity, and respect for what this territory can offer.

We believe that authenticity is not declared — it is shown. In the wine that changes year after year but always remains recognizable. In the hospitality that has the rhythm of a family home, not a facility. In the fact that those who come to L'Oliviera find a genuine place, where the glass tells the same story as the vineyard seen from the window.

This is our way of working. And it's the only one we know.

SUNSET AT OLIVIERA
