Product information
Manually harvesting the bunches of grapes in boxes in the first and second ten days of August, from the unique "S. Afra", on morainic soils of glacial origin in a hilly area.
Soft pressing of the whole grapes.
The first fermentation takes place in temperature-controlled steel vats at 14-16 °C; a part of the Chardonnay and Pinot Noir ferments and matures in French oak barriques, giving complexity, aromatic depth and structure.
The second fermentation takes place in the bottle, with a long ageing on the lees of 80 months.
The wine is non-dosed, with residual sugar of 0 g/L.
Host information
The Bonfadini winery was founded in 1956 with grandfather Giovanni, who had always been a direct grower in Franciacorta. Graziano, one of his 7 sons, inherited a love for the land and a desire to create something special with the grapes they had always grown. So in 1993 he took over his father's business and continued to cultivate the vineyards, selling the grapes to the big companies in Franciacorta.
