Manually harvested, soft pressing.
A part of the Chardonnay is fermented in steel barrels and matured in them for 7 months at a controlled temperature of 14°/16°C. The remaining part is fermented in French oak barrels, medium toasting, for 7 months.
Second fermentation in the bottle at a maximum controlled pressure of 5 bar for a creamy, velvety mousse. After a minimum of 24 months of maturation on the lees it is disgorged.
The Liqueur d'expédition is composed of Chardonnay wine aged in French oak barrels.
Straw yellow colour.
Host information
The Bonfadini winery was founded in 1956 with grandfather Giovanni, who had always been a direct grower in Franciacorta. Graziano, one of his 7 sons, inherited a love for the land and a desire to create something special with the grapes they had always grown. So in 1993 he took over his father's business and continued to cultivate the vineyards, selling the grapes to the big companies in Franciacorta.
