The wine for Holy Mass is prepared, bottled and sealed in accordance with the provisions of canon 924§3 of the Code of Canon Law,
under the supervision of the Director of the Liturgical Office of the Diocese of Mazara del Vallo, in order to ensure the highest quality of the Mass wine.
The wine for Holy Mass is a fortified wine prepared in accordance with canon law with minimal intervention. It is a blend of grapes, rectified must and alcohol derived from vinous materials. It contains few sulphites to comply with the ‘minimal intervention’ criterion imposed by canon law; however, as it is a sweet wine, rectified must must be added (cane sugar is not permitted) and then alcohol derived from vinous materials must be added so that the product has a long shelf life (alcohol from molasses or other non-vinous sources is not permitted).
It is a wine that can last for many years, even once opened, thanks to the fortification process. This process involves the payment of excise duties and special licences issued by customs. Traditionally, this wine is produced in Marsala because the same licences required to produce Marsala wine are used. For this reason, all ‘vino da messa’ marketed in Italy is produced in Marsala (by the ‘Marsalisti’) and is monitored by the Curia of Mazara del Vallo, which specialises in this area. The provincial capital of Marsala is Trapani, but according to the Curia’s organisation, the administrative centre for western Sicily is Mazara, and the monitoring centres are located there (the Curia of Mazara’s logo can be seen on the back of the bottle).
Mass wine is not aged in wood.
