Castrum offers you an evening tasting of wines from the Platinum line carefully paired with Gourmet products from the area for an enchanting experience in the old cellar of the House of Fraccaroli ( sec. XVIII ) - today a unique concept place in Valpolicella, in one of the most characteristic villages of the area: the Square of Castelrotto , near the walls of the old Castrum Rotari ( sec VII ).
During the tasting, carefully selected gastrononomic products are served and paired in line with wines from our winery's PLATINUM collection: the CASTRUM line. Bottles with art labels, each dedicated to a work of the great sculptor Innocenzo Fraccaroli, born in Casa Fraccaroli in 1805 .

The Giampiero Borghetti winery, located in Castelrotto in the municipality of San Pietro in Cariano, in the heart of the Valpolicella Classica area, offers not only excellent wines but also a unique experience of stay in an authentic wine resort. Our historic residence, Casa Fraccaroli, which has been producing wines since 1790, is now a reference point for those seeking an authentic Valpolicella tasting experience.
Casa Fraccaroli, which has always remained in the family, is now under the ownership of Giampiero, the direct heir of the Fraccaroli family. The history of the winery saw a significant leap in quality in the 1980s, when Lisetta and Paolo Borghetti, Giampiero's parents, built the new cellar, where winemaking still takes place today.
In 2022, Giampiero set up a new reception area directly in the cellar, transforming it into a scenic stage decorated with precious artistic mosaics, perfect for Valpolicella wine tastings. This cellar is not just a production site, but a true wine resort, where guests can fully immerse themselves in the world of wine.
Moreover, our wine resort is associated with a bistro and a relais located in the ancient family villa, under the name Castrum, in memory of the ancient fortress that stood until the 15th century on the top of the hill. Here, guests can experience the unique opportunity to "sleep in the cellar," staying in elegantly furnished rooms that reflect the history and winemaking tradition of our family.
Today, Giampiero Borghetti Agricultural Company produces the typical red wines of Valpolicella, plus two original IGT wines and a sweet red passito. We offer two lines of labels: one linked to the Giampiero Borghetti winery, ideal for wine lovers seeking an authentic Valpolicella tasting experience, and the other under the name Castrum, dedicated to the works of the neoclassical sculptor Innocenzo Fraccaroli, Giampiero's ancestor who was born right in Casa Fraccaroli.
