Pairings
An original aperitif that goes well with fried and cold summer dishes. Try it also with pizza, especially with buffalo mozzarella. It can be served clear or cloudy.
In the cellar
The soft pressing with the whole bunch allows to obtain a must flower of maximum clarity and delicacy of aromas, in which we deliberately avoid maceration. Before fermentation comes to an end, the must is bottled without filtration, so that the fermentation is exhausted in the bottle, generating a delicate bubble. This "ancestral method" makes it possible to preserve the most typical and fresh aromas of Raboso and to maintain a very low sulfite content. Bottles are left to age horizontally and periodically stirred for at least 3 months.
Organoleptic characteristics
The wine is cloudy in appearance, with an intriguing deep pink color, made even more lively by the fine and persistent perlage which is revealed in the glass, accompanied by a compact and creamy froth. The nose is immediately expressed with gentle notes of bread crust, barely perceivable, which soon give way to heady aromas of raspberry, wild strawberry still unripe, pomegranate and pink grapefruit, anticipating a clear freshness already perceived by the nose. A vibrant acidity, characteristic of Raboso grape, expresses itself in all its frankness on the palate, lively accompanying the red fruits first perceived on the nose. The permanence on yeasts confers complexity and finesse which evolve over time.
Host information
Terre Grosse, named after the clay soil where it is located, is situated on the right bank of the river Piave and tells a story of family, traditions, hard work, passion for the land and enhancement of local varieties such as Raboso and Grapariol.
Since 1931, when the company was born with grandfather Pietro Toninato, 4 generations have succeeded each other and since 2012 it has undertaken a path that aims at a more careful and environmentally friendly management, using the most modern knowledge and technologies. Certified organic since 2018, the interventions on the vineyard exclude synthetic products and are aimed at creating as much as possible a natural balance.
The history of the family remains strongly rooted in this land: carrying on this work is a way to revive it every day, with new emotions and motivations.
