Vino Bianco DOC
Montepulciano
Spumante

The Moscato Bianco Spumante Secco, produced from Moscato Bianco grapes, is an elegant sparkling wine from the 2024 vintage. The vines, planted in 2020 and trained using the Guyot system, cover a total area of 0.15 hectares and yield 50 quintals per hectare.

This Extra Brut sparkling wine, with an alcohol content of 12% by volume and containing 25 mg/litre of sulphites, is produced using the ancestral method with disgorging:

STEP 1: The grapes were harvested by hand into 16 kg crates, destemmed and pressed within a few hours.

STEP 2: The free-run must began fermentation at a temperature of 21 °C.

STEP 3: When the glucose and fructose content (grape sugars) still present in the fermenting wine reached 35 g/litre, we lowered the temperature to 0°C to halt fermentation and then bottled the wine. Unlike the classic method, no sugar (sucrose) was added to induce secondary fermentation. Up to this point, the method we have adopted is known as the ‘Ancestral’ method; the operations that follow, however, are those practised in the classic method.

STEP IV: After filling and sealing with stainless steel crown caps, the bottles were stored horizontally for the ‘prise de mousse’ for approximately six months, sufficient time for the fermentation phase to be completed.

STEP 5: At the end of fermentation, the natural and characteristic lees present in the horizontally stored bottle were stirred by manually performing the ‘coup de poing’. The bottle was then placed upside down in the pupitre for ageing and for the sediment to settle in the neck: during this period, lasting approximately seven months, ‘remuage’ is carried out several times; this involves manually rotating the bottle by one-eighth of a turn to drive all the sediment to the neck.

STEP VI: In November of the year following the harvest, the sparkling wine is ready to be disgorged (degorgement à la volée) to remove the sediment lying at the tip of the bottle and reseal it with a cork.

These final operations are not carried out in the ‘Ancestrale’ method, where the sediment is not separated from the wine, resulting in it being stirred back into the wine when served. You may also find some sediment in our sparkling wine, due to the manual disgorging process, which is not always carried out perfectly.

With a brilliant sparkling colour, this wine should be served at between 6°C and 8°C to fully appreciate its organoleptic qualities. The Moscato Bianco gives this dry sparkling wine a distinctive aromatic bouquet, with floral and fruity notes that make it perfect for aperitifs and special occasions.

Host information

Chielisò is a small family-run winery that has its roots dating back to 1972. We belong to a family of winemakers for four generations, and our work has always been guided by a deep love for the land and respect for its fruits.

We are located in the hills of Alto Monferrato, in the town of Cassine, a charming medieval village a few kilometers from Acqui Terme, in a land where tradition meets nature and time still flows to the rhythm of the seasons.

Chielisò was not born from a marketing strategy nor from a search for originality, but from a gesture of love. Marco and Giovanna combined the names of their children — Chiara, Elia, and Sofia — creating a name that encapsulates the very essence of our family.

Our vineyards extend over four hectares within the protected natural area of Bosco delle Sorti – La Communa, a precious ecosystem of hills, woods, and trails immersed in tranquility, where biodiversity is preserved with respect and dedication. In this unique environment, the vine grows in harmony with nature, producing authentic wines deeply connected to the territory.

From our grapes are born Barbera del Monferrato DOC, Barbera d’Asti DOCG, Dolcetto d’Acqui DOC, Cortese dell’Alto Monferrato DOC, Monferrato Freisa DOC, Syrah, and a refined Moscato Spumante.

The quality of our wines takes shape primarily in the vineyard. We cultivate without the use of herbicides and without fixed-schedule phytosanitary interventions, but regulated by weather data collection stations installed at multiple points in the vineyards that determine when intervention is truly necessary. This choice stems from the belief that the land must be listened to before it is worked.

The harvest is carried out strictly by hand, carefully selecting the best bunches. It is a moment that for us retains the authentic flavor of tradition: days of shared work, smiles, stories, and conviviality, values that have accompanied the grape harvest for generations.

With the same dedication, we accompany every stage of winemaking, aware that wine is born from the harmony between nature and human labor. For this reason, we operate with care and respect, so that each bottle expresses not only the character of the territory but also an authentic and beneficial relationship between what we produce and those who will have the pleasure of sharing it.

We look forward to welcoming you to our winery, by appointment throughout the year, to share an experience among the aromas and flavors of the territory. You can taste our wines accompanied by the best typical products of the Acqui area and discover the timeless charm of the medieval village of Cassine.
