Le Cantorie

Franciacorta DOCG Saten “Armonia”
Le Cantorie
Product information
Silkiness, finesse and elegance: these are the main characteristics of our Saten. Its intense and fruity perfume, with nuances of bread crust, and its full taste, but at the same time sweet and fresh, will certainly be loved by the most demanding connoisseurs. The secret of this wine - produced only in Franciacorta and from Chardonnay grapes alone - is the long aging period: the bottles of Saten spend 36 months on their yeasts, one year longer than the minimum times indicated in the specification.
The lower pressure in the bottle (5 atmospheres), moreover, gives this wine a very fine and creamy perlage, capable of awakening real "emotions of taste", obtained thanks to a skilful vinification that sees 10% of the base must fermented and aged in small oak barrels for three months.
Suitable as an aperitif and for pairing with the whole meal.
Host information
At the peak of the Casaglio hill in Gussago (Brescia), in the easternmost part of Franciacorta, stands Le Cantorie, a family-run winery. Here, among the green rows and the blue sky, rises an elegant and imposing structure, clad with locally hand-crafted stones sourced directly from the hill where the vineyards grow.
Founded in 2005 thanks to the idea of Emiliano and Maria's third daughter, Elisabetta, Le Cantorie is today a small gem not only architecturally but also, and above all, in terms of production. From the first few hundred bottles, over the last twenty years, Le Cantorie has reached a production of 75,000 bottles a year, all produced with the 14 hectares of owned vineyards, located near the winery and only in hilly positions.
The management of the winery is in the hands of sisters Erika and Elisabetta, the first wine producers in the family that has always worked in the wine industry. Every weekend, together with an all-female team, they open the doors of the winery to tell the story of the family and the philosophy that guides them. All experiences include a visit to the entire structure: an immersive experience discovering panoramic points, historic vineyards, thermo-conditioned steel tanks, large stacks, and oak barrels for wine aging, immersed in an environment that skillfully mixes stone, glass, and wood.
