A sparkling wine produced using the oldest method of sparkling wine production (known as the ancestral method or bottle fermentation).
Unlike the classic method, the wine is bottled before the first fermentation is complete, without subsequent disgorging, leaving the yeasts inside the bottle.
Ancestral wines tend to have a rustic and authentic profile, with more delicate and less aggressive bubbles than other sparkling wines, with a pressure of just over 3 bar ...
Winemaking and Ageing
Pressing: Soft pressing of whole grapes at low temperature
First Fermentation: In temperature-controlled stainless steel tanks (15–16°C) using indigenous yeasts
Bottling: The must is bottled with a natural residual sugar content of approximately 12 g/l, before alcoholic fermentation is complete
Secondary Fermentation: Fermentation ends spontaneously in the bottle during the winter months, trapping the carbon dioxide inside (natural second fermentation)
Disgorging (Degorgement): Not carried out. The wine is neither filtered nor clarified; the spent yeasts remain at the bottom of the bottle (sur lie)
Tasting Notes
Appearance: A cloudy or opalescent straw-yellow colour due to the presence of suspended yeasts. Fine, lively bubbles with moderate persistence.
Nose: Fragrant notes of bread crust, fresh yeast and pastries, combined with fruity hints of green apple and pear, and pronounced citrus and mineral undertones.
Palate: Dry, taut and decidedly fresh. It displays an acidity balanced by the creaminess resulting from prolonged contact with the yeasts. The finish is savoury, clean and slightly bitter.
Pairings and Serving
Serving temperature: 8–9 °C
Food Pairings: Ideal as an aperitif. It pairs perfectly with fatty cured meats (such as mortadella or salami), fried fish, savoury tarts, fresh cheeses and traditional local dishes.
Serving Instructions: It can be served clear … by decanting the wine to separate it from the lees, or by swirling it gently … before opening to resuspend the yeasts, resulting in a richer, more structured wine.

The Massussi Agricultural Company was founded in 1985 by Giuseppina Ruggeri and her husband Vittorio Massussi, with the support of her maternal father Agostino, whose love for the land provided great motivation in the early years of activity.
Initially, the company was established under the name Ruggeri, after the founder Giuseppina, mother of Luigi Massussi.
Thanks to hard work and constant commitment to achieving ever-greater quality, in 2011 the first important recognitions and national publications appeared in guides such as Veronelli and Slow Food, which led to the company being noticed and then contrasted, due to the name similarity, with Ruggeri of Prosecco.
For this reason, the company chose to change its name to Massussi Agricultural Company, bearing the surname of the current head of the family business, Luigi.
Tasting and visit reservations are mandatory and by appointment.
