The Baratto is the name of an ancient vineyard, planted in a hilly area with steep slopes, featuring terraced parts facing southwest. A resilient vineyard on poor, calcareous soil, it gives rise to a wine characterized more by the terroir than by the grape varieties. A savory, mineral, vibrant wine with pronounced freshness, fine and capable of aging well over time.

Grapes: Trebbiano Toscano (Procanico) 60%, Malvasia 30%, Grechetto and Riesling 10%
Soil: sandy with a subsoil of sandstones and calcareous marls

Harvest period: mid-September
Vinification: 70% whole cluster pressed grapes, 30% 48-hour maceration
Fermentation: spontaneous, at cellar temperature (18-25°C)
Aging: in stainless steel and fiberglass tanks on fine lees for 6-8 months.
Bottling: unfiltered, during the waning moon and on Fruit/Flower days in May/June. Energized with Rose Quartz crystal.
Organoleptic description: pale straw yellow color, hazy, delicate fruity aromas of white peach, lime, lychee, floral notes of wildflowers (chamomile), elderflower, sulfurous and mineral notes of hydrocarbons that are noticeable after at least a year in the bottle. Delicate, savory, and fresh taste, with a slight bitter note in the finish.
