Our cellar

Cantina Fassati, owned by the Della Camera brothers, is a beautiful winery producing fine wines, located in Montepulciano, a splendid medieval town situated in one of the most beautiful areas of Tuscany. Montepulciano stands on a limestone hill that separates the Val d’Orcia from the Val di Chiana.

A unique village featuring elegant Renaissance palaces, ancient churches, magnificent squares and small hidden corners, surrounded by rolling hills covered with vineyards, olive groves and golden fields dotted with cypress trees. A town of rare beauty that is certainly well worth a visit!

As far back as the time of their grandfather Augusto, the family owned several vineyards from which he produced wine for family and friends. His passion for the land, and especially for wine, was so strong that over the years he continued to expand the estate by acquiring new plots and planting new vineyards. Then, in the 1980s, as he did not yet have the facilities to vinify large quantities of grapes himself, he began supplying his grapes to the local cooperative winery, while never abandoning his dream of one day having a winery of his own.

That opportunity came in January 2015, when the Della Camera family acquired one of Montepulciano’s historic wineries: “Fassati.” From that moment, the dream began to become a reality!

Fassati is one of the largest wineries in Montepulciano, with a total estate of 101 hectares, including 89 hectares of vineyards and 4.5 hectares of olive groves dedicated to the production of extra virgin olive oil. The area has a Mediterranean climate, with cold winters and hot summers, while rainfall is mainly concentrated in autumn and spring.

The vineyards are situated on hillsides with excellent exposure, ideal for ensuring the proper ripening of the grapes. The soils vary considerably, ranging from tuffaceous to sandy and clay-rich. This diversity enhances the distinctive qualities of the different grape varieties grown here: Prugnolo Gentile, better known as Sangiovese, Mammolo, Canaiolo, Merlot and Cabernet Sauvignon.

The vineyards are pruned using the Guyot method, so that the vines are not pushed to their maximum production potential. This results in lower yields, but undoubtedly higher quality.

Inside the winery is a modern and functional vinification area designed to bring out the distinctive characteristics of the grapes. Stainless-steel tanks are used for the wine’s initial stage of production, while the magnificent and atmospheric ageing cellar houses Slavonian oak casks, with capacities ranging from 20 to 155 hectolitres, as well as French oak barriques. These provide the ideal conditions for the ageing of the prestigious Vino Nobile di Montepulciano DOCG, the flagship wine of the area.

The estate is also equipped with a modern bottling line, where the wine completes its journey and is packaged in cartons, ready to be shipped to its various destinations.

These are only the first steps, taken with the awareness of living and working in a magnificent land, rich in history and culture, which deserves the utmost care and attention — from the vineyard all the way to its fruit.

Today, Giovanni, Tommaso and little Francesco, with passion, love and great determination, continue to carry the family business forward.
