THE HISTORY OF LAUDEMIO
In 1990, the I MORI farm was one of the founding members of the Laudemio Consortium.
Laudemio is produced in accordance with a set of production regulations adopted by around twenty Tuscan farms, which sets it apart from other extra virgin olive oils and gives it an unmistakable character. The name itself dates back to the Middle Ages, when ‘laudemio’ referred to the ‘flower of the harvest’ – the portion reserved for the lord’s table.
LAUDEMIO, THE PRODUCT
Laudemio is not a new type of extra virgin olive oil, but a selection: the perfect fusion of environment, farming practices and the skilful transformation of the fruit into oil. Only the finest oil from each farm within the Consortium is awarded this name, following rigorous checks and tastings by panels of experts.
The nature of the soil, the aspect and a climate characterised by significant temperature differences between summer and winter define the olive-growing environment in which Laudemio is produced.
The Laudemio regulations
- Classification of olive groves based on soil type, olive variety, age and planting and cultivation criteria, with registration in a dedicated register.
- Monitoring of the entire production cycle, from olive cultivation practices right through to bottling, by a committee of highly qualified experts who verify the oil’s analytical and organoleptic characteristics.
- Strict standards for every stage of production:
- Harvesting must be completed by 30 November, to avoid the use of olives that have passed their optimum ripeness. This is an early harvest, carried out exclusively by hand-picking the fruit directly from the tree.
- The olives are pressed within a maximum of 48 hours of harvesting.
- Cold-pressing of the oil.
Compliance with these principles is only possible for farms that oversee the entire production process, starting with the cultivation of their own olive groves.
In the glass: an oil of an intense, brilliant green colour, powerful and aromatic, naturally rich in polyphenols, with a fruity aroma and a full-bodied, savoury and pleasantly spicy flavour. Presented in an elegant bottle in 100 ml, 250 ml and 500 ml sizes.

Amidst the hills of Montalcino and the luminous landscapes of the Maremma, the history of Società Agricola Canneta is a Tuscan journey that weaves together family, land, and time. It all began in 1972, when the Giannelli family founded Azienda Agricola I Mori on the hills around Florence, named in homage to the mulberry trees (“mori”) surrounding the family home. In 1997, a decisive encounter with Podere Canneta in Montalcino occurred: from there, three generations have worked side by side to give voice to the vineyards and create a comprehensive range of Tuscan wines.
Canneta also holds an ancient tale: in 1556, during the siege of the Republic of Siena, it is said that Marshal Montluc moistened his cheeks with the red wine from these woods to conceal the pallor of war. A symbol of character and resilience that today comes alive in the glass.
In the vineyards of Montalcino (10 hectares predominantly of Sangiovese, between 360 and 400 m), the dry and breezy microclimate and the clay schist and marl limestone soils build elegance and balance: the hallmark of Brunello di Montalcino DOCG. In Maremma (5 hectares) and the Florence area (25 hectares), the same care completes a mosaic of grape varieties and landscapes, resulting in wines that are authentic and deeply Tuscan.
