Irpinia Campi Taurasini DOC "Sallù" is a wine with a deep ruby red color that enchants at first glance. The nose gives a rich and enveloping bouquet with fruity notes of cherry and black cherry, enhanced by a light spicy touch. On the palate it stands out for its fullness and harmony, offering a taste of great structure and complexity. The finish is long and persistent, with a lasting impression. A perfect wine for accompanying red meat dishes and aged cheeses, ideal for moments of pure pleasure.
ZONE OF PRODUCTION: Montemarano (Av), Irpinia, Campania.
UVE: Aglianico 100%.
VINEYARDS: Aglianico bred by spurred cordon on clay soil and tending to limestone with a density of about 3,000 plants per ha.
WINE HARVESTING TIME: Early November, manual in boxes.
WINEWINNING: Maceration for 20 days and fermentation at uncontrolled temperature with two daily remontages.
FINING and MATURATION: Refining and maturation for 12 months in 3rd/4th passage barriques and then (assemblage) in steel tanks before completing bottle aging for 6 months.
ORGANOLEPTIC CHARACTERISTICS: Ruby red color, intense bouquet, with tone of cherry, black cherry, slightly spicy, the taste is full and harmonious.
GASTRONOMIC PAIRINGS: Elaborate red meat starters and main courses and aged cheeses.
SERVING TEMPERATURE: It is served at a temperature of 16°-18° C.
