This wine comes from a small plot located in Ome at about 250 meters above sea level, with predominantly indigenous vines on their own roots estimated to be between 90 and 120 years old. The grapes are destemmed with mostly whole berries, followed by a short maceration of 3-4 days with only manual punch downs to avoid extracting too much from the skins.
Fermentation occurs with indigenous yeasts in concrete.
During the second racking, 10% is transferred to oak barriques until bottling. Malolactic fermentation typically concludes in spring. riBelle is a young wine, with a nose focused on red fruits, subtle and very drinkable, with a tannic structure that varies depending on the vintage, supported by good acidity. Alcohol: 13.5% Production: 1500 bottles.
