The journey continues in the cellar, the beating heart of our company, where we passionately explain the winemaking process: from manual harvesting to the transformation of grapes, culminating in wines that express identity, balance, and territory.
The experience concludes with a guided tasting of three wines chosen from our labels, selected to accompany and enhance the story of our production. Each glass is paired with local typical products, a sincere expression of the Acqui region and its gastronomic tradition, for a harmonious encounter between flavors and territory.

Chielisò is a small family-run winery that has its roots dating back to 1972. We belong to a family of winemakers for four generations, and our work has always been guided by a deep love for the land and respect for its fruits.
We are located in the hills of Alto Monferrato, in the municipality of Cassine, a charming medieval village just a few kilometers from Acqui Terme, in a land where tradition meets nature and time still flows with the rhythm of the seasons.
The name ChiEliSò was born in 2005 from a gesture of love: the union of the names of our father's children, Chiara, Elia, and Sofia. The same love inspires our work every day and can be found in every bottle we produce.
Our vineyards extend over five hectares within the protected natural area of Bosco delle Sorti – La Communa, a precious ecosystem of hills, woods, and trails immersed in tranquility, where biodiversity is preserved with respect and dedication. In this unique environment, the vine grows in harmony with nature, offering authentic wines deeply connected to the territory.
From our grapes are born Barbera del Monferrato DOC, Barbera d'Asti DOCG, Dolcetto d'Acqui DOC, Cortese dell'Alto Monferrato DOC, Monferrato Freisa DOC, Syrah, and a refined Moscato Spumante.
The quality of our wines takes shape primarily in the vineyard. We cultivate without the use of herbicides and without fixed-schedule phytosanitary interventions, but regulated by weather data detection stations installed at multiple points in the vineyards that determine when intervention is truly necessary. This choice stems from the belief that the land must be listened to before it is worked.
The harvest is carried out strictly by hand, carefully selecting the best bunches. It is a moment that for us retains the authentic flavor of tradition: days of shared work, smiles, stories, and conviviality, values that have accompanied the grape harvest for generations.
With the same dedication, we accompany every stage of winemaking, aware that wine is born from the harmony between nature and human labor. For this reason, we operate with care and respect, so that each bottle expresses not only the character of the territory but also an authentic and beneficial relationship between what we produce and those who will have the pleasure of sharing it.
