The vineyards of Podere Fedespina are located in Lunigiana. Our wines, Fedespina, Pinot Noir from 40 year old vines, Ca', Merlot and Spinorosso, Merlot 60% and Ciliegiolo 40% are produced in a natural way, without the use of chemical fertilizers, herbicides, clarifications and filtrations. The yields are low, we select healthy and rich bunches and we give life to wines with a minimum level of sulfites, structure, freshness, elegance and quality. In the vineyard there is no herbicide or herbicide and manual care, with maximum respect for the environment.
In the cellar the grapes are destemmed and gently pressed so that part of the grapes go whole inside the barrel. The soft pressing is followed by pumping over and pressing always soft so as to extract only the most noble part of the tannins. We use the cement cask for alcoholic and malolactic fermentation. Particular attention is paid to the choice of the wood of the barriques from which we seek stability and not taste. We use 300-litre barrels of French wood with different ages and toasts. The low use of sulphur dioxide reaches as far as the bottle. This is because we want our wines, as well as good, digestible and healthy.
