Create your own bottle of sparkling wine!
Our oenologist will introduce you to the history and the secrets of the Metodo Classico sparkling wines and will help you producing your own bottle!

 

SCHEDULE OF THE EXPERIENCE

Our oenologist will explain the production process of a Metodo Classico sparkling wine:

• The life cycle of the vines, soil management and harvesting techniques
• Pressing of the grapes: free-run must, second and third fraction
• First fermentation (alcoholic fermentation)
• Liquer de tirage, second fermentation in the bottle and ageing on the lees
• Remuagepupitre and gyropallet
• Manual disgorging of the bottles: practical test
• Liquer d’expédition and corking: practical test
• Tasting of a sparkling wine sur lattes plus other three finished Metodo Classico

 

The glasses of Metodo Classico will be paired with a 3-course menu.

The Calatroni family

In 1964 grandfather Luigi bought the land that two generations of the Calatroni family have been working as sharecroppers. We began our venture producing traditional wines from Croatina and Barbera grapes, but from 2002 on, under the guidance of brothers Cristian and Stefano, the youngest generation of the family, the focus has more and more shifted to Pinot Noir. We vinify the noble grape as a red wine and especially as white and rosé Metodo Classico sparkling wines. The current production of Metodo Classico has reached 100.000 bottles, all carrying the Oltrepò Pavese Metodo Classico DOCG.

“The first vintage of our Metodo Classico sparkling wines was in 2008. Right from the very beginning, we had a clear vision of the style of our Metodo Classico: elegant, fresh, mineral bubbles, that must be the truest expression of the grape, of the soils where it’s planted and the peculiarities of the vintage”

Today, the Calatroni brothers grow about 25 hectares of organic vineyards with the invaluable help of their parents Fausto and Marisa, embracing sustainability as the core value of their philosophy of work. In recent years we opened our agriturismo and launched our hospitality program.

Picnic in vigna con visita e degustazione. Stata una bella esperienza formativa e sensoriale. Giro in cantina molto interessante, degustazione perfetta in atmosfera amichevola. Picnic in vigna è stata una esperienza inaspettata. Mezzo la vigna guardando bellissimo paesaggio, ascoltando il suono del ruscello, suono di una leggera brezza anche suoni di cicale ti fa proprio staccare la mente dalla vita quotidiana, dal solito tram-tram. Sicuramente tornerò ancora e consiglierò a miei familiari.

La visita guidata a vigna e cantina è stata molto interessante. Il Sig. Roger ha fornito tantissimi elementi conoscitivi sulla tecnica di vinificazione. Poi è arrivato il momento del pranzo con abbinamento e degustazione vini. I piatti erano davvero squisiti, prepararti con ingredienti di qualità ed improntati alla migliore tradizione locale. Che dire dei vini? davvero eccellenti, in particolare gli spumanti. Devo anche esprimere un elogio per l'organizzazione, oltre che per la gentilezza del personale e dei proprietari. Veramente bravi!

Molto buono il pranzo associato a ottimi vini. Unica pecca: difficile da trovare impostando Google maps che porta altrove. E per questo abbiamo saltato la visita in cantina poiche arrivate tardi! Comunque sono stati molto gentili e ci torneremo volentieri!
