ENOLOGICAL INFORMATION: Material of fermentation tanks: 316 stainless steel; Fermentation temperatures: 15°C. Duration of fermentation: 15 days. Method and duration of refermentation and Presa di spuma: Charmat method (Martinotti) 4 months of refermentation at about 5 Bar pressure in autoclave after the addition of new yeasts. Residual Sugar: 4gr/l (Brut) oenological operations to stabilize the product: clarification, refrigeration followed by filtration.
ORGANOLEPTIC PROPHILE: This variety produces intense and aromatic wines, with deep aromas of white fruit, pineapple, peach, and apple that fade into a second tone with a floral and citrus touch, toned down by aromas of honey and freshly cut grass. The Sparkling Version has a lively and persistent bubble, delicate on the palate and easy to drink. Crystal clear and very bright in color, with hints of citrus and white flowers.
