VINEYARDS: Our Greco grapes are grown by counter-espalier (Guyot) system on mineral-rich soil of volcanic origin at an altitude of about 620m s.l.m. in the hills around the locality of Chianche.
WINE HARVEST: The hand-harvesting is done in the second half of October.
WINE-MAKING: The grapes are placed in tanks for 12 hours at a temperature of 5°C so that the skins remain in contact with the must. This stage is followed by a 15-day fermentation at a controlled temperature of 18°C.
MATURATION: In stainless steel tanks until the end of the spring following the harvest, when it is bottled.
