TASTING
All the wines of the company. From the ancestral, which we will taste inside the old palmento, to the three wines of the deAetna classic line to savor the essence of the Etna terroir:

The tasting will continue with our finest wines, those of the Contrade line:
- Etna Bianco Superiore Contrada Praino
- Etna Bianco DOC Contrada Blandano

LUNCH
The second tasting is accompanied by a 3-COURSE LUNCH that tells the story of our region. A true gastronomic journey, with ingredients that best express the Sicilian essence, prepared according to family recipes and our sustainability principles, including seasonality and the availability of products from our garden or trusted local suppliers.
- The APPETIZER includes one of these typical preparations, depending on the products of the season: confit tomato with stracciata; crostino with a petal of Nebrodi pork lard, sulla or wildflower honey, and pistachio; cheese “piacentino ennese” with tomato jam; pistachio cream with Ragusan buffalo stracciata and drops of tomato jam; vegetable tart with seasonal vegetables and parmesan cream.
- The FIRST COURSE also follows the seasons and can be: pasta with Sicilian pesto (basil, cherry tomatoes, almonds, pine nuts, and salted ricotta); pasta with peppers and bread crumble; pasta with eggplant cream, basil, almonds, fresh tomatoes, and parmesan; pumpkin cream with stracciata and bread crumble; broccoli cream with toasted pancetta.
- The SECOND COURSE features Messina-style bites of veal or pork on a bed of vegetables or legumes and roasted potatoes.
The journey is always accompanied by traditional Etna bread seasoned with organic Evo oil from the olive groves surrounding our vineyards and concludes with coffee served with a chocolate brownie.
Lunch starts at 1:00 PM* (it is possible to reverse the order: lunch at 1:00 PM and tour at 2:30 PM)
EXTRA: Oil Experience – Journey through history, wine, and oil €15
We offer a guided tasting of three extra virgin olive oils, authentic expressions of the local cultivars.
A sensory journey through three intensities:
Biancolilla Cultivar (Delicate)
Light and elegant aroma, floral notes, and fresh almond. A harmonious oil with a delicate spicy finish.
Tonda Iblea Cultivar (Medium)
More structured profile, with hints of green tomato and aromatic herbs. Balanced, with a pleasant bitter and spicy note.
Nocellara dell'Etna Cultivar (Intense)
Decisive and persistent character, with vegetal notes, artichoke, and green almond. A deep oil with a volcanic personality.
The tasting will be guided through visual, olfactory, and gustatory analysis to understand how soils, exposures, and altitudes influence aromas and structure.
