The Dry Sparkling White Wine, made from Moscato Bianco grapes, is an elegant sparkling wine from the 2023 vintage. The vines, planted in 2020 and trained using the Guyot system, cover a total area of 0.15 hectares and offer a yield of50 quintals per hectare.

This Extra Dry sparkling wine, with an alcohol content of12% Vol. and containing 25 mg/liter of sulfites, is produced by the anchoric method with disgorging:

The grapes were harvested by hand in 16-kg crates, de-stemmed and pressed after a few hours.

IIST STEP:The flower must was began fermentation at a temperature of21°C.

IIIST STEP:When the glucose and fructose (grape sugars) content, still present in the fermenting wine, reached 35 g/liter, to stop fermentation we lowered the temperature to 0°C and bottled. Unlike the classical method, no sugar (sucrose) was added to referment the wine. Up to this point, the method we have adopted is called " Ancestral" , the operations that follow, on the other hand, are those practiced in the classic method.

IVth STEP: After filling and corking with stainless steel crown caps, the bottles were stored in a horizontal position for "frothing" for about six months, sufficient time for the completion of the fermentation phase.

Vth STEP: At the end of fermentation, the natural and characteristic sediments present in the bottle lying horizontally were stirred by manually performing the " fist stroke." The bottle was then placed upside down in the pupitre for refinement and decanting of the sediments in the neck: during this period, of about seven months, the " remuage ", i.e. the manual rotation of the bottle by an eighth, is performed several times to send all the sediment " to the tip ".

VIth STEP: In November of the year following the harvest, the sparkling wine is ready to be disgorged (degorgement a la volèe) to get out the sediment lying in the tip of the bottle and close it with the cork.

These last operations are not carried out in the "Ancestral" method where the sediment is not separated from the wine with its consequent stirring at the time of the pouring. You may find some residue in our sparkling wine as well, due to manual disgorging performed not always perfectly.

Bright sparkling color, this wine should be served between 6°C and 8°C to fully appreciate its organoleptic qualities. White Muscat gives this dry sparkling wine a distinctive aromatic bouquet, with floral and fruity notes that make it perfect for aperitifs and special occasions.

ChiEliSò is a smallfamily-run business, established in 1972. We are located in the hills of Alto Monferrato, in the municipality of Cassine, a small medieval town located a few kilometers from the city of Acqui Terme. The name ChiEliSò was born in 2005, from my father's love for his children Chiara, Elia and Sofia, and with the same love we produce our wines.

Our vines are located within the natural preservation area "the Bosco delle Sorti - la Communa," an area protected since 2001 and formed by hills, plateaus planted with vines and a wooded area of 300 hectares full of hiking and mountain biking trails.

The area planted with vines is 5 hectares and the wines produced are: Barbera del Monferrato D.O.C, Barbera d'Asti D.O.C.G, Dolcetto d'Acqui D.O.C, Cortese dell'alto Monferrato D.O.C, Monferrato Freisa D.O.C, Syrah and a Sparkling White Wine.

The production chain begins with the management of the vineyard without the use of herbicides and without phytosanitary interventions at a fixed cadence, but regulated by weather data collection stations installed at several points in the vineyards that determine for us the times when intervention is really necessary.

The harvest is conducted manually in order to always choose the best bunches and to keep alive the harvest tradition, celebrated with laughter and shared lunches. The use of sulfites in our wines is kept to a minimum (30-50 mg/liter maximum).

The spirit of the four generations of winemakers to which we belong has always been inspired by love and respect for nature and its products, which is why we continue to cultivate the vineyard in search of a synergy between the needs of production, the natural life of the plants and the soil that hosts them. With the same determination we make wine, remembering that at every stage of processing there must be a beneficial relationship between the wine we give life to and the health of those who will drink it.

You can come and visit us by appointment any time of the year to taste our wines paired with typical Aquese products and visit the medieval village of Cassine.
