Sangiovese vinified in Beaujolais style using whole clusters to impart softness and enhance the more delicate characteristics of this wonderful grape variety, while maintaining the typical freshness and sapidity that express our calcareous soils.
A wine to be enjoyed like a rosé, perfect for aperitifs and/or by the pool in summer. Best served at a temperature of 10-12 degrees.
Denomination: Rosso Umbria I.G.P.
Grapes: 100% Sangiovese
Soil: Sandy, with the presence of silt and clays (sandstones and calcareous marls)
Age of vineyards: Vigna Crocefisso from 2005 for Sangiovese and Vigna Severina from 1970 for white grapes
Yield per hectare: 50-70 q./ha
Harvest period: second half of September.
Vinification: 50% of the grapes pressed immediately to obtain a rosé must, the other 50% in whole clusters immersed in the rosé must for infusion for 2-3 weeks. Alternatively, depending on the vintage, semi-carbonic maceration of whole clusters for 2-3 weeks.
Fermentation: spontaneous, at cellar temperature (18-25°C) in fiberglass tanks.
Aging: in fiberglass barrels on fine lees for 6-8 months.
Bottling: without filtration, during the waning moon.
Organoleptic description: pale ruby red color, aromas of currants, raspberries, and wild strawberries, with light herbal notes. Delicate, soft, and fresh taste, reminiscent of fruit juice, with great drinkability.
