The Cupa is our dearest child: sanguine, connected to the earth, sensitive and strong at the same time. A selection of the best Sangiovese grapes from the Cupa and Crocefisso vineyards, harvested at optimal ripeness, gives a powerful and elegant wine, with great structure and balance, a pure expression of Sangiovese from Torgiano (D.O.C. since 1968). A wine with a long aging potential.
Denomination: Sangiovese Umbria I.G.P. (formerly Torgiano Rosso Riserva DOCG)
Grapes: 100% Sangiovese
Soil: Sandy, with clay and silt (sandstones and limestone marls)
Vineyard age: Vigna Cupa from 2008 and Vigna Crocefisso from 2005
Grape yield per hectare: 50-60 q./ha
Harvest period: late September/early October
Vinification: hand-harvested grapes, foot-trodden, maceration on the skins from 20 to 120 days.
Fermentation: spontaneous, at cellar temperature (18-24°C) in concrete tanks and terracotta amphorae with manual punchdowns.
Aging: in concrete tanks and terracotta amphorae on fine lees for 6 months, in 500 L. Austrian oak tonneaux from Stockinger and 600 L. terracotta amphorae for 12 months, then another 12 months in concrete tanks and finally a 12-month bottle aging.
Bottling: without filtration, on the waning moon and fruit days, after 30 months of aging.
Organoleptic description: intense ruby red color, aromas of cherries, berries, currants, candied oranges, violets, licorice, earthy notes, cloves, pipe tobacco, and a balsamic finish. Intense, persistent taste, with briny notes, excellent balance, and great acidity and structure.
