Just like in the famous fairy tale where a princess kissed a frog to turn him into a prince, making him more beautiful and kind... this is our attempt to transform the Grechetto grapes (the frog), full of structure and acidity, into a wine (the prince) as delicate and gentle as possible.
Wine made from Grechetto grapes from the old vineyard “Il Baratto” harvested slightly earlier than optimal ripeness to achieve greater freshness and lightness.
A pure grape juice without added sulfites, just grapes and nothing else!!
Denomination: Grechetto Umbria I.G.P.
Grapes: 90% Grechetto, 10% Riesling
Soil: sandy-loamy with a subsoil of river deposits and sandstones
Age of the vineyards: Il Baratto vineyard from 1975 (Grechetto from Orvieto), Montebello vineyard from 2010 (Riesling and Grechetto from Todi)
Yield per hectare: 50-60 q./ha
Harvest time: early September
Vinification: whole bunches of Grechetto are pressed in an old horizontal press.
Fermentation: spontaneous both the first in stainless steel tanks and the second in the bottle.
Aging: in stainless steel tanks on fine lees for 5-6 months and then 6 months in the bottle.
Bottling: without filtration, on a waxing moon and on Fruit/Flower days in March/April with the addition of frozen must from the old Grechetto vineyard to induce refermentation in the bottle. NOT DISGORGED with about 2-3 bars of internal pressure.
Organoleptic description: golden yellow color, hazy due to the presence of yeasts in the bottle. Fruity aromas of apple, candied oranges, mandarin, and cedar, floral, bread crust, and mineral notes. Delicate, mineral, and fresh taste, with fine bubbles that disappear after a few minutes in the glass.
