


VINEYARD EXPOSURE: North-East, at 200 - 200 meters above sea level in the municipality of Montalcino.
SOIL COMPOSITION: Predominantly clay-limestone with a good presence of skeleton.
YIELD PER HECTARE: 80 quintals.
HARVEST: Manual, with a preliminary selection of grapes in the vineyard.
HARVEST TIME: From early to late September until early October.
VINIFICATION AND AGING: The freshly harvested grapes are destemmed and pressed, then fermented in temperature-controlled stainless steel tanks of 50 hl. This is followed by maceration of the grapes on the skins, which can last from 3 to 4 weeks. The duration depends on the ripeness of the grapes. Subsequently, malolactic fermentation occurs in stainless steel tanks of 30 and 50 hl. An eventual aging phase may then begin. This phase takes place in 30 hl Slavonian oak barrels, lasting from a minimum of 3 months to a maximum of about 6 months. After bottling, bottle aging is carried out for at least 3 months, after which the product will be ready for sale, having passed at least 1 year since the harvest.
