VINEYARD EXPOSURE: North-East, 200 - 220 meters above sea level in the municipality of Montalcino.
SOIL COMPOSITION: Predominantly clay-limestone with a good presence of gravel.
YIELD PER HECTARE: 55 quintals.
HARVEST: Manual, with a preliminary selection of grapes in the vineyard.
HARVEST TIME: From late September to early October.
VINIFICATION AND AGING: The freshly harvested grapes are crushed and destemmed, then fermented in temperature-controlled stainless steel tanks of 50 hl. This is followed by maceration of the grapes on the skins, lasting from 3 to 4 weeks depending on the ripeness of the grapes. Subsequently, malolactic fermentation occurs in stainless steel tanks of 30 and 50 hl. After this, the aging period begins. This phase takes place 60% in 30 hl Slavonian oak barrels and 40% in 5 hl French oak tonneaux, lasting from a minimum of 24 months to a maximum of about 30 months. After bottling, the wine undergoes bottle aging for at least 4 months, after which the product will be ready for sale, having passed at least 5 years since the harvest.
